Betty's Brown-Sugar-Topped Baked Sweet Potato Recipe
In this video, Betty demonstrates how to make a luscious Brown-Sugar-Topped Baked Sweet Potato to accompany her Southern dinner, including Pecan Crusted Oven Broiled Chicken Breasts, Country-Style Pressure Cooker Green Beans, Morning Coffee Blueberry Muffins, Perfect Pound Cake with Sugar Glaze Topping with Crispy, Sugary Nuts, and Triple Chocolate Frozen Ice Cream Pie (all in other videos, or videos to come soon). Ingredients: 1 (red or white) sweet potato, medium and uniformly-sized cooking oil spray salt (I used fresh ground sea salt.) 3 tablespoons butter, softened to room temperature 1/4 cup light brown sugar Place the sweet potato on a piece of aluminum foil that is large enough to wrap it for baking. Spray the top and bottom of the sweet potato with cooking oil spray. Sprinkle (or grind) salt on the outside of the sweet potato. Place the sweet potato diagonally in the center of the aluminum foil. Wrap the aluminum foil over the top and up at the ends, so that there will be no leaks from the potato in your oven. (I put the wrapped potato on a baking dish.) Place the wrapped sweet potato in a 350 degree oven, and bake for approximately 1 hour, or until soft when squeezed. (Use a potholder to squeeze.) While your sweet potato is baking, make your Brown Sugar Topping: Mix 3 tablespoons softened butter with 1/4 cup brown sugar until smooth. Place in a small serving bowl. When your sweet potato is done, remove it from the oven, remove the foil, and place your baked sweet potato on a nice serving plate. Cut the sweet potato open, and spoon your desired amount of brown sugar topping into the opening. It will melt and drizzle down the sides. Delish!!!

The buche de Noel/Christmas Yule Log is a traditional dessert served at Chritmas time in France and French Canada History of yule log: Ingredients: Cake: 2/3 cup flour 1/4 teaspoon soda 1/4 teaspoon salt 4 eggs 3/4 cup sugar 3 squares unsweetened chocolate (substitute 9 tbsp of unsweetened cocoa and 3 tbsp of melted butter) 2 tablespoons water Filling: 1/2 pint whipping cream (1 cup) 2 tablespoons icing (confectioners') sugar 1 teaspoon vanilla Icing: 1/3 cup butter 2 cups icing (confectioners') sugar 1/4 cup cocoa 2 tablespoons milk 1/2 teaspoon vanilla Directions: Cake: Preheat oven to 350 degrees F. Grease a 15 x 10 inch jelly roll pan, and line with waxed paper. Grease waxed paper. Mix flour, soda, and salt together. Beat eggs in a small mixer bowl at high speed, until thick and light - about 5 minutes. Gradually add the sugar, and beat until thick. Melt the chocolate and water together, and add to the egg mixture. Fold in the dry ingredients, and mix gently but thoroughly. Spread in prepared pan, and bake for 15 - 17 minutes, until the cake springs back when lightly touched. Remove from oven and turn out immediately onto a tea towel that has been sprinkled generously with icing sugar. Remove waxed paper, and trim of any crisp edges of the cake. Begin at the narrow end, and roll up the cake and the tea towel together. Allow to cool. Filling: Whip cream until soft peaks form. Stir in icing sugar and vanilla and whip until stiff. Unroll the cake when cool, and spread the top with the whip cream. Re-roll, without the towel. Cut a thin slice off of each end of the roll, to make them even. Icing: Soften butter. Combine all ingredients and beat until smooth and of good spreading consistency. Use the centres of the ends you sliced off the cake to make "bumps on the log": Use a little of the icing to affix the bump to the side of the cake - one on each side. Ice the entire cake with the icing, including the ends and the bumps. Run a fork along the icing so that it resembles tree bark. Sprinkle with icing sugar, and decorate with holly or other Christmas decoration leaves. Store in refrigerator. Excellent meringue mushroom recipe and instructions: Music Mcleod

Crab Cakes Benedict Crab Cake Recipe - How To Make Crab Cakes Benedict Wow guests with a delicious twist to traditional eggs Benedict featuring crab cakes. Ingredients Crab Cakes 1 pounds (16 ounces) fresh, frozen or canned crab meat, rinsed and drained 1 1/2 cups fresh bread crumbs or one large baking potato, cooked and grated 2 large eggs 1/4 cup red or yellow pepper, finely chopped 1/4 cup light mayonnaise 1 tablespoon Dijon mustard 1/4 teaspoon salt 1/4 teaspoon pepper 1/4 cup flour (for dredging) 1 1/2 cups Panko or traditional breadcrumbs, optional 1/4 cup canola or olive oil 8 large eggs, poached Lightened Lemon-Basil Hollandaise Sauce 1/4 cup water or skim milk 1 tablespoon lemon juice, freshly squeezed 1 slice of white sandwich bread, torn into pieces 1/4 cup butter, melted Salt to taste 3 fresh basil leaves Instructions Rinse and drain crab meat well; remove any cartilage. In a large bowl, gently mix together the crab, bread crumbs, one egg, red pepper, mayonnaise, mustard, and salt and pepper to taste. Form into 8 patties, adding a little extra mayo if needed to help the mixture hold together. Place a small amount of flour in a shallow dish and season with salt and pepper. Put the second egg into another shallow dish and mix with a fork. Put the Panko in a third shallow dish. Dredge patties in flour. For extra crispy crab cakes, dip them in beaten egg to coat, then dredge in Panko or breadcrumbs. Cook patties 5 minutes per side or until golden brown. Meanwhile, pour water and lemon juice over the bread cubes; let stand for 5 minutes until the bread absorbs all the liquid and becomes mushy. In a blender or food processor, mix the soaked bread until it turns into a paste. While processor is running drizzle in warm melted butter; process until mixture thickens slightly. Taste and add salt if necessary. Add basil leaves and pulse a few times until the basil is chopped and incorporated. Easy Apple Pie Recipe
The Recipe: Ingredients- 6-8 apples (spy) 3/4 cups brown sugar 1/2 tsp cinnamon dash of ground nutmeg 3 tbsp flour 1/2 tsp salt 1 tsp lemon juice 1 tbsp unsalted butter 2 frozen pie crusts Combine apples, sugar, cinnamon, flour, salt and lemon juice. Preheat oven to 425F. Poke thawed bottom crust with fork. Fill crust with mixture. Dot with butter as shown in video. Moisten edges of crust with water. Seal thawed top crust to bottom crust. Wrap edges with tin foil to prevent burning. Slit top crust to let steam escape. Optional: Brush top crust with milk, sprinkle with white sugar. Bake for 30 minutes at 425F, then reduce heat to 350. Grilled Tilapia
The weather in Seattle has been absolutely BEAUTIFUL this past week. It's been way to marvelous and hot( to us Seattle folk anyway) for me to want to cook indoors lately so I had my sweetie fire up the grill and I pretty much been barbecuing everything. I took a look in my freezer and I found some tilapia just waiting to be cooked! I remember someone on my Facebook Fan Page asking for a tilapia recipe recently and it clicked... WHY NOT SHARE A GRILLED RECIPE FOR TILAPIA? It's not often that I buy tilapia, and I haven't grilled any in a while so I wanted to share this quick and yummy recipe before It started to rain( you know one minute is Seattle it could be sunny, seconds later it will be raining cats and dogs.). Lemon Poppy Seed Sour Cream Cake

For complete recipe instructions visit Ingredients: 1 cup butter, 2 1/2 cups sugar, 6 egges, 3 cups flour, 1/4 tsp baking soda, 1 container sour cream, 2 tsp vanilla, 3 tbsp grated lemon peel, 2 tbsp poppy seeds Beat butter until creamy. Add sugar, beating until light and fluffy. Add 1 egg at a time until blended. Stir together flour and baking soda. Add to butter alternately with sour cream until blended, beginning and ending with flour mixture. Stir in vanilla, lemon peel, and poppy seeds. Pour batter into cake pan. Bake at 325 degrees for 1 hour. Cool for 10 minutes, invert onto serving plate and sprinkle with powdered sugar.
